Drain and rinse the chickpeas
Dice the cucumber into 1 ½ cups
Dice the bell pepper into 1 ½ cups
Halve the cherry tomatoes into 1 cup
Roughly chop the olives into ½ cup
Chop the pepperoncini peppers (optional)
Crumble the feta cheese into ½ cup
In a bowl, whisk together olive oil, red wine vinegar, lemon juice, dijon mustard, garlic powder, dried oregano, salt, and black pepper to make the vinaigrette
Combine all salad ingredients in a large bowl
Pour the vinaigrette over the salad and toss to combine
