Greek Chickpea Salad
  1. Drain and rinse the chickpeas

  2. Dice the cucumber into 1 ½ cups

  3. Dice the bell pepper into 1 ½ cups

  4. Halve the cherry tomatoes into 1 cup

  5. Roughly chop the olives into ½ cup

  6. Chop the pepperoncini peppers (optional)

  7. Crumble the feta cheese into ½ cup

  8. In a bowl, whisk together olive oil, red wine vinegar, lemon juice, dijon mustard, garlic powder, dried oregano, salt, and black pepper to make the vinaigrette

  9. Combine all salad ingredients in a large bowl

  10. Pour the vinaigrette over the salad and toss to combine

  11. Serve and enjoy
