Make the cookie dough: In a bowl, combine the almond flour, salt, maple syrup, and melted coconut oil. Mix until smooth, then fold in the chocolate chips.
Prepare the chocolate shell: Melt the chocolate and coconut oil together in the microwave or using a double boiler. Set aside.
Assemble: Spread the cookie dough evenly onto a parchment-lined tray, smoothing it out with another piece of parchment paper. Pour the melted chocolate over the top and sprinkle with flaky sea salt (optional).
Freeze: Place in the freezer for at least 1 hour, or until fully set, then break into pieces and enjoy! Store leftovers in the freezer.
