Preheat oven to 350 F. Brush 8-inch square baking dish with canola oil. In mixing bowl, combine sweet potatoes, eggs, sugar, half-and-half, vanilla, salt and 1 tablespoon oil. Mix well and spoon into the prepared baking dish.
To make the topping mix flour, cinnamon, brown sugar, pecans and 2 tablespoons oil in bowl until well combined. Sprinkle evenly over the sweet potato mixture. Bake until hot and and topping begins to brown, 30-40 minutes. Serve, refrigeration any leftovers.
