Garlic Bread With Shallots
  1. Roast the garlic and shallots: Cut the tops off the garlic bulbs and shallots. Place on aluminum foil, and toss with a generous amount of olive oil, salt and pepper. Wrap with the foil and place in oven at 350°F for 1 hour (or maybe a little more) until the garlic and shallots are golden and caramelized. Let cool.

  2. Make the garlic butter: In a bowl, squeeze out the caramelized garlic and shallots. Add butter, miso, red pepper flakes, salt and pepper, and mix well. I ended up giving the mixture a whiz in the food processor.

  3. Spread and sprinkle the bread: Slice the loaf of bread in half (or quarters) and spread the garlic-shallot-butter mixture evenly on the bread. On top, sprinkle a generous amount of cheese. Place in the oven at 350 degrees for 15 minutes. Finish in the broiler for a minute or two for a golden brown and crunchy top, keeping a close eye on it so it doesn’t burn.

  4. Drizzle and Serve: Top your garlic bread with a drizzle of honey and chopped parsley. Slice and serve.
