Pa­cific Rim Chow­der
  1. Drain corn, re­serv­ing liq­uid.

  2. In a large pot over medium-high, heat oil.

  3. Add corn, onions, car­rots, cel­ery, pota­toes, gar­lic, co­rian­der, cumin, salt and pep­per. Sauté un­til veg­eta­bles are soft.

  4. Add re­served corn liq­uid, to­ma­toes, co­conut milk, chili sauce, chipo­tles, hot sauce, Worces­ter­shire sauce and minced cilantro.

  5. Sim­mer for 10 min­utes.

  6. Stir in fish; sim­mer for an­other five min­utes or un­til fish is cooked.

  7. Serve gar­nished with cilantro leaves and green onions.
