1-2 tbsp oil, heated on medium high heat until shimmering. Add sausage chopped into ¼" pieces. Turn sausage with tongs or spoon after ~4 min. Cook additional 2 min
Remove sausage to bowl, leaving behind any fat. Add onion, garlic, shallots. Reduce heat to medium. Cook until onion is caramelized
Add sausage back in. Add peppers, beer, cook for 3 min on medium high heat
Move everything around in the pan, cook another 2 min. At this point I added black pepper and italian herbs
Cover, reduce heat back down to medium. Stir periodically, allowing the beer to reduce down to a sauce
