Combine all of the ingredients in a medium-sized bowl, except for the eggs, cheese, and salsa. Stir to combine.
Add everything to a large-sized skillet over medium high heat. Sauté for about 5-8 minutes or until the veggies are softened and the sausage is cooked through.
Crack the eggs into a large bowl and whisk.
Reduce the heat to low and pour the whisked eggs into the skillet. Use a spatula to gently push the eggs towards the center to the pan, until cooked through. Stir in the cheese.
Divide into 6 servings and top with a heaping tablespoon of red salsa.
