In a bowl, whisk together oil, yogurt, milk, and egg
Add the flour, baking powder, salt, and fold until almost combined
Add the fillings and mix until evenly distributed
Scoop into lined muffin cases
Optionally add a couple of spoonfuls of pesto or chutney into the centre before topping with more muffin batter
Bake at 200 degrees Celsius for 15 minutes or until a skewer comes out clean
Enjoy warm, or freeze and reheat in the microwave for 30-60 seconds
