Add the potatoes to cold salted water and bring to the boil, then simmer until cooked. Drain and leave for a while until they are dried out (if you mash them immediately the dough will be super wet!)
Add in the rest of the ingredients, stir to form a dough then bring together with your hand. Knead for 3 mins in the bowl until a smooth dough.
Tip onto a floured surface, roll out until about 1cm thick and cut into squares
Cook for a couple of minutes on each side on a griddle (or a dry pan) and then fry in plenty of butter until golden and crispy
