Lemon Bars (keto)
  1. Preheat oven to 350°F. Line a 8x8-inch baking dish with parchment paper.

  2. Melt butter in a saucepan over medium heat. Once melted, pour into a large bowl. Add the Swerve, vanilla extract, and egg yolk. Whisk until well combined.

  3. Slowly add almond flour, coconut flour and salt. Continue mixing until dough forms.

  4. Press dough evenly into bottom of baking dish and bake for 20 minutes.

  5. Allow to cool while you make the filling.

  6. Beat together the eggs, lemon juice, lemon zest, and Swerve with an electric mixer.

  7. Add arrowroot powder and mix until well combined.

  8. Pour filling over crust and bake for 20 minutes or until filling has set.

  9. Allow to cool completely and refrigerate for 1 hour.

  10. Slice into 16 bars and serve.
