Meanwhile, cook lentils
Add cooked lentils and marinara sauce to mushroom zucchini mix. Add kale.
In a separate bowel, combine cottage cheese, ground chia seeds, nutritional yeast, and chopped parsley, and half the parmesan.
Mix in whole wheat penne with cottage cheese mixture.
Start layering. Sauce on bottom, followed by half the penne / cottage mixture, more sauce, remainder of the penne / cottage mixture, more sauce. Top with mozzarella and parmesan. Cover and refrigerate overnight.
Take out and bake at 400⁰f for 30 to 60 mins.
