Cook glass noodles according to package instructions. Drain, rinse in cold water and set aside. Cut the noodles with scissors a few times.
Whisk 2 eggs in a bowl. Add 1 tsp of oil to a heated pan. Pour the egg into the pan, tilt it around so the egg spreads thinly. Cook for about 1 minute, flip over and cook for another minute. Let cool and chop into thin strips. Set aside.
Heat oil in a cooking pan over medium-high heat. Sauté the carrots and bell pepper for 3-4 minutes until softened. Remove from pan.
Add more oil and sauté onion, mushroom, garlic, and green onion until softened. Add spinach and salt, and stir fry until it begins to wilt. Remove from pan.
In the same pan, combine soy sauce, sesame oil, brown sugar, and black pepper. Once the sugar dissolves, add the cooked noodles and toss to coat evenly with the sauce.
Add the vegetables back in and toss everything together until well combined. Top with egg strips and sesame seeds. Serve as a side dish or main entrée.
