Crock Pot Green Enchilada Chicken Soup
  1. Place the chicken breasts in the crock pot.

  2. Add the chicken broth, green enchilada sauce, green chiles, onion, garlic, cumin, chili powder, oregano, and salt.

  3. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender.

  4. Remove the chicken and shred it with two forks.

  5. Return the shredded chicken to the crock pot.

  6. Stir in the cream cheese, blended cottage cheese, and cauliflower rice.

  7. Cover and cook for an additional 20–30 minutes, until creamy and heated through.

  8. Stir in the lime juice just before serving.

  9. Taste and adjust seasoning if needed.
