Salmon, Coriander & Miso Smoosh
  1. Heat the oven to 180°C.

  2. Add the salmon to a tray with the water and ½ the soy sauce. Cook in the oven for 15 minutes.

  3. 4 minutes before the cooking time for the salmon is up, add the broccoli to the tray. Meanwhile, finely chop the coriander.

  4. Roughly chop the cooked broccoli into bite-size pieces, and use a fork to break the salmon into flakes.

  5. Mix together the miso paste, vinegar and ginger paste in a medium bowl.

  6. Add the salmon and broccoli to the bowl, followed by the coriander. Mix to combine.

  7. ‘Smoosh’ over toast, pitta bread, a bagel or whatever you fancy.
