Queso Rice Base
Preheat oven to 400°F
Cook rice per directions
Season chicken with chili powder, cumin, garlic powder, salt, and pepper.
Coat glass baking dish lightly with olive oil. Place chicken evenly. Spray or lightly drizzle olive oil over chicken.
Bake for 15-25 minutes until internal temperature of chicken is 165°
Chop chicken and set aside.
Blend cottage cheese, cream cheese, powdered cheese, Alfredo mix, and taco seasoning in a blender until smooth.
Pour into pan on stovetop on medium heat.
Add shredded cheddar until melted.
Stir all cheese into rice until it’s creamy AF
Add spinach and tomatoes into rice.
Top with chopped chicken, chipotle sauce, and mix-ins of choice.
