Blend chia seeds: Transfer 1 cup nondairy milk to a blender. Add ¼ cup chia seeds. Blend until fully combined and gel-like. Transfer to a medium container with an airtight lid.
Add whole seeds: Add the remaining ¼ cup milk and 1 tablespoon chia seeds. Mix well. Refrigerate for at least 30 minutes.
Make walnut crumble (optional): Transfer the walnuts, dates, wheat germ, hemp hearts, cocoa powder, strawberry powder, and alma powder to the canister of a food processor. Pulse until a fine crumble forms.
Mix: Transfer to the container with the chia pudding and mix well to combine. Refrigerate for up to 5 days. Add more nondairy milk and chopped fresh strawberries for serving.
