In a bowl combine: Blended cottage cheese, Egg, Vanilla extract, Sweetener. Mix until smooth.
Stir in: Almond flour, Baking powder, Salt. Mix until a soft dough forms. Fold in sugar-free chocolate chips if using.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of dough onto the sheet and gently flatten.
Bake for 12–15 minutes until lightly golden on the edges. Let cool for 10 minutes before serving.
