Preheat oven to 350°. In a large bowl, whisk cake mix to aerate and remove any clumps. In a medium bowl, whisk eggs and oil until smooth. Using a spatula, gently fold egg mixture into cake mix until a dough forms and no dry streaks remain.
Place sprinkles on a plate. Grease a medium ice cream scoop with oil. Using prepared scoop, scoop out dough and roll in sprinkles until exterior is coated. Arrange between 2 parchment-lined baking sheets, spacing about 2" apart.
Bake cookies until slightly firm, 10 to 12 minutes. Let cool.
