Mango Cheesecake
  1. Peel and blend the mango until smooth.

  2. In a bowl, mix the Greek yogurt, cream cheese, eggs, and mango puree.

  3. Pour the mixture into a parchment-lined or greased baking dish.

  4. Bake at 340°F for 40 minutes.

  5. Let it cool at room temperature, then refrigerate for at least 4 hours (overnight is even better!).
