Butterfly shrimp and pat dry really well (this shrimp comes peeled and de-vein)
Season shrimp with olive oil, salt, pepper, paprika, chipotle powder, garlic and lemon zest; let marinate while making your chimichurri
To make the chimichurri, add all ingredients above to a food processor and give it a blitz
Cook shrimp in a skillet over medium- high heat for about 1-2 minutes per side, depending on size
Once shrimp has cooked, drizzle chimichirri generously and enjoy!
