Boil lemon scraps for 15 mins.
Mix boiled lemon scraps with sugar and oil.
If using, add 2 eggs or 1 egg and 60ml lemon juice.
Add flour, baking powder, and a pinch of salt.
Form some cookies.
Roll them in some icing sugar.
Bake for 15-20 mins (180C/360F) or until golden.
