Preheat oven to 325°F (163°C). Line a rimmed baking sheet with parchment paper.
In a large bowl, combine: Oats, pecans, almonds, cinnamon, salt, and brown sugar
In a small saucepan (or microwave-safe bowl), warm together over low heat: Honey, peanut butter, and olive oil—just until smooth and pourable. Remove from heat and stir in Mapeline flavoring.
Pour the wet mixture over the dry ingredients. Mix very well until everything is evenly coated.
Spread mixture onto baking sheet in a thick, even layer. Press it down firmly with the back of a spatula or your hand.
Bake for 30 minutes, rotating the pan halfway, until golden brown and fragrant. Do not stir!
Turn off the oven, and let it sit inside with the door cracked open for 10–15 minutes if you want extra crunch.
Cool completely on the pan before breaking into chunks.
