Melt down a little pork fat or oil in a pan
Add the chopped Mexican spring onions and a pinch of salt
Cook on low heat
Add the whole jalapeno with seeds
Add the finely chopped garlic
Add the finely chopped cilantro
Add the rinsed pinto beans and some water
Add a little chicken bullion
Cover and cook for about 20 minutes
After 20 minutes, mash up some of the beans with a masher
Simmer and reduce the mixture to the desired consistency
