Mix together 3.5 cups bread flour, 3 heaping teaspoons brown sugar, and 3 teaspoons salt in a bowl
In a measuring cup, combine 2 cups very warm water, 3 teaspoons instant yeast, and 3 teaspoons granulated white sugar
Let the wet mixture sit for about 2 minutes to activate the yeast
Pour the wet ingredients into the dry ingredients and mix with a whisk until incorporated
Use your hands to mix the dough until all dry ingredients are incorporated; the dough will be shaggy and sticky
Cover the dough with a kitchen towel and let it rise on the warmest part of your kitchen counter for about 1 hour until it doubles in size
Flour your work surface and turn out the dough
Gently roll the dough into a ball, being careful to preserve air bubbles
Cut the dough in half to make two baguettes
Roll each half into a baguette shape, gently pulling and stretching as you roll
Place both baguettes in a baguette pan
Score the top of each baguette 3 times with a knife
Cover and let rest for 10-20 minutes
Place a pan with water on the bottom rack of the oven to create steam
Place the baguette pan on the top rack
Loosely tent aluminum foil over the baguettes
Bake at 450 degrees for 10 minutes
Remove the water pan and aluminum foil
Bake for another 10 minutes until golden brown
Let the baguettes rest for about 20 minutes before cutting
