Baguette Recipe
  1. Mix together 3.5 cups bread flour, 3 heaping teaspoons brown sugar, and 3 teaspoons salt in a bowl

  2. In a measuring cup, combine 2 cups very warm water, 3 teaspoons instant yeast, and 3 teaspoons granulated white sugar

  3. Let the wet mixture sit for about 2 minutes to activate the yeast

  4. Pour the wet ingredients into the dry ingredients and mix with a whisk until incorporated

  5. Use your hands to mix the dough until all dry ingredients are incorporated; the dough will be shaggy and sticky

  6. Cover the dough with a kitchen towel and let it rise on the warmest part of your kitchen counter for about 1 hour until it doubles in size

  7. Flour your work surface and turn out the dough

  8. Gently roll the dough into a ball, being careful to preserve air bubbles

  9. Cut the dough in half to make two baguettes

  10. Roll each half into a baguette shape, gently pulling and stretching as you roll

  11. Place both baguettes in a baguette pan

  12. Score the top of each baguette 3 times with a knife

  13. Cover and let rest for 10-20 minutes

  14. Place a pan with water on the bottom rack of the oven to create steam

  15. Place the baguette pan on the top rack

  16. Loosely tent aluminum foil over the baguettes

  17. Bake at 450 degrees for 10 minutes

  18. Remove the water pan and aluminum foil

  19. Bake for another 10 minutes until golden brown

  20. Let the baguettes rest for about 20 minutes before cutting
