With a fork, stab the potatoes all over. Place them onto a plate and microwave at 800W for 6 mins, turn the potato and keep microwaving for 3 min intervals until cooked through and soft.
Meanwhile, trim and finely chop the chilli and coriander. Add both into a bowl with the garam masala and cumin seeds.
Once the potatoes are soft, halve and scoop out the flesh into the spices. Lightly mash, leaving some bits in and let cool down slightly. Once cooled down a little, stir through both cheeses. Taste and season with salt and pepper.
Butter the bread on both sides. Share the potato mixture onto 4 slices of bread and top with a slice of bread.
Place a frying pan over medium heat. Once hot, add the sandwiches in and cook on both sides until golden and the cheese has melted, 5-7 mins – if it’s browning too quickly, turn the heat down.
Slice the toasties in half and serve with your favourite dip or chutney.
