One Pot Creamy Cajun Chicken Pasta (dairy-free)
  1. Heat olive oil in a large pot over medium heat.

  2. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until the chicken is browned on all sides, about 5-7 minutes.

  3. Remove the chicken from the pot and set aside.

  4. In the same pot, add the onion and garlic. Sauté until the onion is translucent and fragrant.

  5. Add the bell peppers and cook for another 3-4 minutes until they start to soften.

  6. Return the chicken to the pot and pour in the chicken broth, coconut milk, and uncooked pasta.

  7. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 15-20 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.

  8. Season with salt and pepper to taste.

  9. Garnish with green onions and fresh parsley before serving.
