Preheat the oven to 350 degrees and grab a lined baking tray.
Combine butter, sugars, eggs and vanilla in a bowl. Mix well.
Combine the flour, baking soda, baking powder and shredded coconut in a separate bowl and gradually add to the wet mixture. Don't overmix!!
Roll dough into 2 tbsp sized balls. Combine white sugar and shredded coconut in a small bowl to roll the dough in and cover on all sides.
Bake for 10 minutes. Makes 15-16 cookies.
Once the cookies have cooled melt your chocolate and then dip the bottom of the cookies in it, resting on parchment palate afterwards to cool in the fridge.
