It also lasts in the fridge for up to 4 days and is best served chilled.
This dish is traditionally made with regular spinach, NOT baby spinach. However, I've tested both and to me, it's fine to use either. Baby spinach is MUCH easier to find in the store and may be more accessible so I based this recipe around that.
When deciding on your portion, a good rule of thumb is one bag or box of spinach will serve one person.
