Clean and slice the mushrooms. Don’t make the slices too thick. Set aside.
Mince the garlic and measure out the honey. Set aside.
Pan fry the mushroom slices in batches: Heat 1 tbsp of the oil in a frying pan over medium high heat, until hot and shiny.
Once the oil is hot, add some of the sliced mushrooms. They should be spaced out, and not touching.
Pan fry the mushroom slices for 2-3 minutes on each side, until lightly browned. Turn down the heat a little if there are any signs of the mushrooms burning.
Transfer the seared mushrooms to a bowl.
Repeat this process with the rest of the mushrooms, cooking them in batches so they can be properly spaced out in the pan. Add more oil to the pan and adjust the burner heat as needed.
Return all the mushrooms to the pan over medium-high heat. Add a little more oil if needed.
Add the honey and seasonings. Pan fry the mushrooms for 2-3 minutes until they are evenly coated with the honey and spices.
Transfer to a serving bowl and top with freshly cracked black pepper and salt to taste. Enjoy!
