Preheat oven to 220C/200C fan forced. Line a baking tray with baking paper and spray paper with oil.
Place the cottage cheese and eggs in a bowl. Season with salt and pepper, and the garlic powder, if using. Mix until well combined.
Pour mixture onto the prepared tray and use the back of a spoon or spatula to spread thinly into a circle shape. Bake for 20 minutes or until lightly browned. Set aside for 5 minutes to cool.
Fill the flatbread with desired fillings, to serve.
