  1. Begin by cutting the pork shoulder or pork butt into strips that are 1.5 inches thick and approximately 6 inches long. Evenly sprinkle salt over the pork.

  2. In a mixing bowl, combine soy sauce, hoisin sauce, Shaoxing wine (or a substitute like dry sherry, sake, or a mix of rice vinegar and water), honey, garlic, ginger, Chinese five spice powder, and the optional red food coloring. Whisk until the mixture is well blended.

  3. Set aside about 3 tablespoons of the marinade for later use in basting. Pour the remaining marinade over the pork in a large bowl, ensuring the meat is well coated. Cover the bowl and refrigerate for 2 to 3 hours, or overnight for a more intense flavor.

  4. Preheat your air fryer to 400°F and lightly spray the basket with oil. Arrange the marinated pork in a single layer in the basket, cooking in batches if necessary.

  5. Air fry the pork for 18 to 23 minutes, flipping and basting the meat twice during the cooking process, approximately every 8 to 9 minutes.

  6. Once the pork is cooked, transfer it to a cutting board and allow it to rest for 5 minutes. Slice the pork into pieces that are ½ inch thick and serve alongside steamed white rice and your choice of vegetables.
