Boil the potatoes in a large pot just until tender. Drain and set aside.
Put the chicken in a bowl and drizzle with the olive oil and season with the spices listed. Mix it up well to make sure each piece is coated.
Air fry at 400 for about 8 minutes or until chicken reaches 165 degrees.
Whisk together the ingredients for the dressing.
In a 9x13 greased baking dish, mix the potatoes, chicken and dressing.
Top with the cheeses.
Bake for 15-20 minutes, just until the cheese is nice and melty.
Top with the bacon.
Garnish with the green onions if desired.
