Ingredients (Makes ~½ cup):
Combine all ingredients in a small jar or bowl.
Whisk or shake well to emulsify. Let it sit for 5–10 minutes to allow the chia seeds to absorb some liquid and slightly thicken the dressing.
Taste and adjust salt, lemon, or mustard as needed.

Store in the fridge for up to 5 days. If it thickens too much, simply stir and add a tiny splash of water or lemon juice to loosen it.
