Soak wooden skewers in water for at least 30 minutes.
Combine spice mixture in a small bowl and set aside. Prep chicken by cutting into 3" pieces, coat in olive oil and spices.
Skewer chicken pieces tightly onto skewers.
Make garlic parmesan sauce by combining all ingredients in a saucepan over low heat. Reserve some sauce for basting.
Cook skewers in batches in an air fryer at 400°F for 5 minutes, flip, baste, and cook another 2 minutes. Repeat basting and cook for an additional 5-6 minutes until internal temp reaches 165°F.
Finish with a final basting of reserved garlic sauce, sprinkle with parmesan, and serve.
