Healthier Lemon Olive Oil Cake
  1. In a bowl add all the wet ingredients and mix.

  2. Add all dry ingredients to wet but don’t over mix.

  3. Pour the batter into a baking tin with parchment paper (15cm / 6inches baking tin).

  4. Bake at 175C static oven for 25 minutes (turn halfway through).

  5. Sprinkle chonky sugar on top after removing from the oven.
