Cornbread Waffle Bites with Smoked Gouda & Honey

Ingredients

For the Cornbread Batter

1 cup yellow cornmeal

¾ cup all-purpose flour

2 tbsp sugar

1½ tsp baking powder

½ tsp baking soda

½ tsp salt

Wet Ingredients

1 cup buttermilk

2 large eggs

¼ cup unsalted butter, melted

1 tsp fresh thyme leaves (optional)

Mix-ins

1 cup shredded smoked gouda cheese

To Finish

Honey, for drizzling

Extra fresh thyme, for garnish

Instructions

Preheat Your Waffle Iron

Lightly grease and heat your mini waffle iron to medium-high.

Make the Batter

In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt. In another bowl, mix buttermilk, eggs, and melted butter.

Combine & Fold

Pour wet ingredients into dry and mix until just combined. Fold in shredded gouda and thyme.
