Chimichurri Steak Bites With Roasted Garlic Mash
  1. Slice top off garlic bulb, drizzle with olive oil, wrap in foil, roast at 190°C for 35–40 mins until caramelised. Squeeze cloves out.

  2. Simmer in salted water for 15–18 mins until tender, then drain.

  3. Mash potatoes with roasted garlic, butter, and warm milk until creamy. Season to taste.

  4. Mix parsley, garlic, oregano, and chilli in a bowl.

  5. Stir in olive oil, vinegar, and lemon juice.

  6. Season and let rest 15 mins before serving.

  7. Cut steak into bite-sized cubes. Toss with spice blend and olive oil.

  8. Heat a pan over medium-high until smoking hot.

  9. Sear cubes 1–2 mins per side until browned outside but still juicy.
