Healthy Cookies
  1. Preheat oven to 350° F

  2. Whisk together the egg, sugar, coconut oil, vanilla and maple syrup

  3. Mix in remaining ingredients until well combined

  4. Refrigerate the dough for 20-30 minutes

  5. Line pan with parchment paper and scoop 1-2 tablespoons of dough into pan

  6. Bake for 10-12 minutes, then remove from oven and tap the pan a few times on the stove top or counter to flatten the cookies

  7. Let cool for 10 minutes

  8. Store in sealed container for up to 1 week
