Add your thighs, skin side down seasoned with salt & pepper into a cold pan. Add on high heat until the skin is crispy, 4-5 mins, slip for another 4-5 mins
Slice your veg & remove the chicken from the pan, add your veg with your seasonings and fry off for 5 mins - halfway through add your orzo
Add your water and scrape the pan, add your stock, tomatoes & your chicken and simmer for 10 mins
Finish with lemon juice (zest if you fancy), feta, pepper, parsley & chilli flakes - a dollop of yogurt would be good too!
