Punjabi Tofu Jalfrezi
  1. Heavy oil in a sauce pan on a medium heat. Add cumin seeds and sizzle. Add the onions and fry for 2-3minutes

  2. As they begin to soften add the garlic paste and fry for a few seconds. Add all the spice powders and stir for a further minute

  3. Now add peppers and mix with spices for 4-5 minutes. Add tomatoes at this stage and cook until slightly softened

  4. Add the tofu cubes and stir well to coat with all the spices. Cook for a couple of minutes, season to taste

  5. Add the ginger, lemon juice & garnish with fresh coriander. Serve warm with naan or chapatti
