Samoon - Iraqi Flatbread For Kebab
  1. Mix together yeast, sugar and warm water and let activate

  2. Mix in flour, salt and olive oil

  3. Mix together until a nice smooth dough forms

  4. Turn out onto a floured surface and knead into a ball

  5. Place in an oiled bowl, cover and let rise for 1 hour until doubled in size

  6. Turn out onto a floured surface and divide into equal size balls

  7. Shape the balls into samoon breads

  8. Brush milk over the top and sprinkle with sesame seeds

  9. Bake in the oven until golden brown

  10. Serve with homemade doner meat, in kebabs, sandwiches, or with hummus
