Fish Sauce Wings
  1. Start by adding 2 tablespoons fish sauce, chicken bouillon, white pepper , tempura powder to the chicken wings give it a mix then set aside for 30-45 minutes

  2. For the sauce, add palm sugar, garlic pound until it becomes a paste then add fish sauce, lime juice, Fresno chili, cilantro stir until the sugar is dissolved then set aside

  3. Add oil to a nonstick pan on medium heat(enough to fry the garlic). When the oil is warm add the minced garlic. Fry until it turns a light blonde color then strain it out and reserve

  4. Add a generous amount of oil to a pan. Divide the wings into two batch. Carefully fry the wings. Each side should take about 4-5minuted or until it's cooked on the inside

  5. Remove and drain on a rack lined with paper towel

  6. Add the wings to a bowl. Spoon in half of the sauce(the rest is used as a dip) half of the fried garlic. Give it a toss then plate up garnish with more cilantro and the rest of the fried garlic
