High Protein Tofu Tacos
  1. Heat the oil in a skillet over medium heat.

  2. Add the tofu and break it apart with a wooden spoon until it is crumbled.

  3. Add the taco seasoning and chipotle pepper and toss to coat.

  4. Spread in an even layer and allow to cook, undisturbed, for 3 minutes.

  5. Toss and cook for another 2 minutes, or until some browned bits have formed.

  6. Pour in the salsa and toss again.

  7. Cook for another 10-15 minutes - you want the tofu to continue to brown and the salsa liquid to be absorbed.

  8. Add some lime juice and cilantro.

  9. Taste and adjust the seasonings as needed.

  10. Heat the tortillas over an open flame or in a skillet.

  11. To assemble, layer the tofu on the tortillas and then top with any of the optional toppings.

  12. Serve and enjoy!
