Pulled Pork With Bbq Sauce
  1. Mix together brown sugar, paprika, garlic powder, onion powder, mustard powder, cumin powder, salt, and black pepper to create spice rub

  2. Rub spice mix all over pork and place in slow cooker

  3. Pour 1 cup beer over pork and cook on low for 10-12 hours

  4. Transfer pork to roasting pan and skim ⅓ cup fat from slow cooker juices

  5. Drizzle skimmed fat over pork and roast at 180C/350F for 20 minutes

  6. Slice off fat cap, drizzle with more fat, and roast for another 15 minutes

  7. For BBQ sauce: combine apple cider vinegar, tomato ketchup, water, molasses, brown sugar, mustard powder, garlic powder, Worcestershire sauce, salt, black pepper, and cayenne pepper in a saucepan

  8. Simmer sauce over medium heat for 45 minutes, stirring occasionally, until thickened

  9. Add ¾ - 1 cup of juices from slow cooker to sauce until it reaches syrup consistency

  10. Shred the cooked pork and toss with most of the BBQ sauce

  11. Serve in soft buns with slaw or shredded lettuce as sliders, or with sides like mac and cheese, cornbread, and coleslaw
