Cucumber Salad
  1. Thinly slice cucumbers and toss with kosher salt in bowl. Let sit for an hour then squeeze out liquid.

  2. Thinly slice onion.

  3. Mix cucumbers, onion, paprika, oil, and vinegar together. Top and season with dill weed.

You can replace oil with sour cream or yogurt, and dill weed with parsley.
