Make the creamy cilantro drizzle by blending ½ cup non-fat Greek yogurt, 1 tbsp light mayo, juice of ½ lime, 1 small garlic clove, handful fresh cilantro, splash of water, and salt until smooth
Assemble bowls by layering 2 cups cooked jasmine rice as the base
Top rice with sliced cooked chicken breast
Add the street corn mix to each bowl
Drizzle with creamy cilantro sauce
Garnish with optional toppings: fresh cilantro, lime wedges, and avocado slices
