Street Corn Chicken Protein Bowl
  1. Season 1.5 lb raw chicken breast with chili powder, smoked paprika, garlic powder, cumin, salt and pepper

  2. Heat 1 tbsp olive oil in a pan and cook the seasoned chicken breast until fully cooked through

  3. Prepare the street corn mix by combining 2 cups corn, ½ cup non-fat Greek yogurt, 2 tbsp light mayo, juice of 1 lime, ¼ cup cotija or reduced-fat feta, ½ tsp chili powder, and salt

  4. Make the creamy cilantro drizzle by blending ½ cup non-fat Greek yogurt, 1 tbsp light mayo, juice of ½ lime, 1 small garlic clove, handful fresh cilantro, splash of water, and salt until smooth

  5. Assemble bowls by layering 2 cups cooked jasmine rice as the base

  6. Top rice with sliced cooked chicken breast

  7. Add the street corn mix to each bowl

  8. Drizzle with creamy cilantro sauce

  9. Garnish with optional toppings: fresh cilantro, lime wedges, and avocado slices
