Shaved Brussels Sprouts Salad With Champagne Vinaigrette
  1. To make the dressing, add all ingredients to a blender and blend until smooth. Taste and adjust salt and pepper as needed.

  2. Finely shave the brussels sprouts and add them to a large bowl.

  3. Add sliced green onions and pecorino romano cheese.

  4. Chop walnuts very finely and transfer them to a pan on the stove over medium heat. Stir, toasting the walnuts until fragrant and golden, watching to make sure they don't burn. Remove from heat and add to the salad bowl.

  5. Pour dressing on top, toss and enjoy!
