Make the blueberry chia jam first. Tip the blueberries into a small microwavable bowl. Microwave for 60 seconds until the berries have burst and released their juice. Mash lightly with a fork, leaving some texture. Stir in the chia seeds. Leave to sit for 5 minutes to thicken into a proper jam (the chia soaks up the juice and sets it beautifully).
Whip the yoghurt base. Tip the Greek yoghurt into a bowl. Add the peanut butter and honey. Whisk together with a fork or hand whisk for a full 60 seconds until light, fluffy and properly combined. The whipping is what makes this feel indulgent rather than just yoghurt.
Assemble. Spoon the whipped yoghurt into a wide shallow bowl. Add generous spoonfuls of the blueberry chia jam on top — either dolloped in the centre, swirled through, or piled to one side.
Sprinkle the porridge oats and coconut flakes and extra bluebs over the top.
Eat straight away with a spoon.
