Preheat grill to medium-high heat.
In a bowl, combine olive oil, minced garlic, dried oregano, salt and pepper. Add the shrimp and toss to coat.
Grill the shrimp for 2-3 minutes on each side, until pink and cooked through. Remove from grill and set aside.
In a large salad bowl, combine the cucumber, cherry tomatoes, red onion, green bell pepper, Kalamata olives, and feta cheese.
In a small bowl, whisk together lemon juice, red wine vinegar, extra virgin olive oil, dried oregano, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Add the grilled shrimp to the salad and gently toss.
Garnish with fresh parsley.
Serve immediately and enjoy!
