Coconut And Onion Rotis
  1. In a mixing bowl, combine the grated coconut, flour, salt, and chopped onions.

  2. Add the coconut oil and mix well. Slowly add warm water and knead into a soft dough.

  3. Divide the dough into equal portions and roll them into thick discs or press them out on a lightly oiled plate.

  4. Heat a tawa or pan over medium heat and cook each roti for 2-3 minutes per side until you see golden spots on the surface.

  5. Serve warm with a sambol, curry, or just as is!
